Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Mix Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

    Knead Dough

    Mix until combined, then knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Focaccia Assembly

    Shape the Focaccia

    Once risen, punch down the dough and transfer it to a greased baking pan. Gently stretch and press the dough to fit the pan.

    Add Toppings

    Using your fingers, create dimples in the surface of the dough. Sprinkle with fresh rosemary, sea salt, and halved cherry tomatoes.

    Second Rise

    Cover with a cloth and let it rise for another 30 minutes.

    Preheat your oven to 425°F (220°C).

    Bake the focaccia for 20-25 minutes or until golden brown. Remove from the oven and let it cool slightly.

    In a bowl, combine softened unsalted butter, chopped chives, lemon zest, and minced garlic. Mix until well combined.
