Mousse Preparation

Prepare the Gelatin
Soak the gelatin sheets in cold water for about 5 minutes until softened. Once softened, gently squeeze out the excess water.

Combine Elderflower and Sugar
In a saucepan, combine the elderflower cordial and sugar. Heat gently until the sugar is dissolved.

Dissolve the Gelatin
Add the softened gelatin to the warm elderflower mixture and stir until fully dissolved. Remove from heat and let it cool slightly.

Whip the Cream
In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

Fold in the Mixture
Once the elderflower mixture has cooled a bit, fold it gently into the whipped cream. Add lemon juice and mix until just combined.

Chill the Mousse
Transfer the mousse mixture into serving glasses and refrigerate for at least 4 hours or until set.
Preserved Apricot Topping Preparation

Prepare the Apricots
In a small saucepan, combine the dried apricots and water. Bring to a boil and then reduce to a simmer. Cook for about 10-15 minutes until the apricots are soft.

Sweet Corn Madeleines Preparation

Preheat the Oven
Preheat your oven to 190°C (375°F). Prepare a madeleine pan by greasing it lightly.

Combine Mixtures
Gently fold the wet mixture into the dry ingredients until just combined. Do not overmix.

Fill the Pan
Spoon the batter into the madeleine molds, filling them about 3/4 full.

Bake the Madeleines
Bake in the preheated oven for 10-12 minutes or until golden brown and a toothpick inserted comes out clean.

Cool and Serve
Remove the madeleines from the pan and allow them to cool on a wire rack before serving.
