Preparation

    Prepare the Glass

    Fill a highball glass with ice cubes to chill while preparing the cocktail.

    Muddle Mint

    In a shaker, add the fresh mint leaves and gently muddle them with the back of a spoon or a muddler to release their oil and fragrance.

    Mix the Cocktail

    Add the gin, fresh lime juice, and lavender simple syrup to the shaker with the muddled mint. Fill the shaker with ice and shake vigorously for about 15 seconds.

    Strain and Pour

    Remove the ice from the highball glass and strain the mixture into the glass over fresh ice.

    Top with Tonic

    Carefully pour the tonic water over the gin mixture in the glass.

    Garnish

    Garnish the drink with a sprig of fresh lavender and a lime wedge on the rim of the glass.
