Chocolate Mousse

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir occasionally until melted and smooth. Remove from heat and set aside to cool slightly.

Whisk Eggs and Sugar
In a separate bowl, vigorously whisk the large eggs and granulated sugar together until the mixture becomes pale and fluffy, about 5-7 minutes.

Whip Cream
In another bowl, whip the 200 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no streaks remain. Be careful not to deflate the mixture.

Chill Mousse
Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours, or until set.
Whipped Cream Topping

Whip Cream
In a chilled bowl, whip 100 ml of heavy cream with powdered sugar and vanilla extract until stiff peaks form.

Serve
Once the mousse is set, top each serving with a dollop of the whipped cream before serving.
