    Prepare the Clams

    Rinse the clams under cold water to remove any sand or debris. Soak them in fresh water for about 30 minutes to help purge any remaining grit.

    Preheat the Wood Fire

    Prepare your wood-fired grill or oven and let it reach a steady temperature suitable for steaming.

    Sauté Garlic and Tomatoes

    In a skillet over medium heat, melt the butter. Add minced garlic and cook for about 1 minute until fragrant. Add chopped heirloom tomatoes and sauté for 5-7 minutes until they start to soften.

    Combine Ingredients

    Add the clams to the skillet and pour in the white wine. Stir gently to combine all ingredients.

    Steam the Clams

    Cover the skillet with a lid or aluminum foil and place it in the wood-fired oven. Steam for 7-10 minutes, or until the clams have opened.

    Serve

    Remove from heat and discard any clams that did not open. Serve the clams with the broth and tomatoes, garnished with fresh herbs if desired.
