    Prepare the Onions

    Slice the yellow onions thinly. Heat a large cast-iron skillet over a wood fire or on the stovetop over medium heat. Add the butter and olive oil, then add the sliced onions.

    Cook the onions, stirring frequently, until they are deep golden brown and caramelized, about 30-40 minutes. Add the minced garlic and thyme in the last 5 minutes of cooking.

    Deglaze the Pan

    Pour in the white wine and scrape up any brown bits from the bottom of the skillet. Let it simmer for a few minutes until the wine reduces by half.
