Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry. Carefully lower them into the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, season with salt and black pepper.
