BBQ Sauce

    Prepare the BBQ Sauce

    In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well to combine.

    Simmer the Sauce

    Bring the mixture to a simmer over medium heat. Reduce the heat to low and let it simmer for about 15 minutes, stirring occasionally.

    Adjust Seasoning

    Taste the sauce and adjust the seasoning with hot sauce if desired. Set aside to cool.

Crispy Onion Rings

    Slice the Onions

    Peel and slice the large onions into 1/4 inch thick rings. Separate the rings and place them in a bowl.

    Soak in Buttermilk

    Pour buttermilk over the onion rings. Allow them to soak for at least 30 minutes.

    Prepare the Coating

    In another bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper.

    Heat the Oil

    In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Onion Rings

    Remove onion rings from buttermilk, allowing excess to drip off. Dredge each onion ring in the flour mixture, shaking off any excess.

    Fry the Onion Rings

    Carefully place a few onion rings at a time into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Assembly

    Wash and dry the fresh lettuce. Slice the smoked gouda cheese into desired shapes if necessary.

    On a plate, place a layer of fresh lettuce, add a generous amount of BBQ sauce, top with crispy onion rings, and finish with slices of smoked gouda cheese. Serve immediately.
