Prepare the BBQ Sauce
In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Bring the mixture to a simmer over medium heat. Reduce the heat to low and let it simmer for about 15 minutes, stirring occasionally.

Adjust Seasoning
Taste the sauce and adjust the seasoning with hot sauce if desired. Set aside to cool.

Soak in Buttermilk
Pour buttermilk over the onion rings. Allow them to soak for at least 30 minutes.

Prepare the Coating
In another bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper.

Coat the Onion Rings
Remove onion rings from buttermilk, allowing excess to drip off. Dredge each onion ring in the flour mixture, shaking off any excess.

Fry the Onion Rings
Carefully place a few onion rings at a time into the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Wash and dry the fresh lettuce. Slice the smoked gouda cheese into desired shapes if necessary.
