Soak the Potatoes
Place the cut potato strips into a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and results in crispier fries.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to accurately measure the oil temperature.

Dry the Potatoes
After soaking, drain the potato strips and pat them dry thoroughly with paper towels. This will prevent oil splatter and ensure the fries get crispy.

Fry the Potatoes
Carefully add a batch of the dried potato strips into the hot oil. Fry for about 6-8 minutes or until they are golden brown and crispy. Make sure not to overcrowd the pot.

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, paprika, and garlic powder to taste.
