Pulled Pork Preparation

Season the Pork
In a small bowl, mix together smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Rub this spice mixture all over the pork shoulder.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add the apple cider vinegar and water to the slow cooker. Cover and cook on low for 8-10 hours, or until the pork is tender and shreds easily.

Shred the Pork
Once the pork is cooked, remove it from the slow cooker and let it rest for about 15 minutes. Use two forks to shred the pork into bite-sized pieces. Return the shredded pork to the slow cooker, and mix in the BBQ sauce. Allow it to heat through for an additional 30 minutes.

Make the Dressing
In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.

Cover the coleslaw and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
