Pasta

Method

Pasta Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Add the olive oil.

  2. 2

    Knead the Dough

Using a fork, beat the eggs, gradually incorporating the flour from the edges of the well. Once the mixture is too stiff to mix with a fork, use your hands to knead the dough on a floured surface for about 8-10 minutes until smooth.

  3. 3

    Rest the Dough

Wrap the kneaded dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

  4. 4

    Roll out the Dough

Divide the dough into four pieces. Roll one piece at a time into thin sheets using a pasta machine or a rolling pin. Cut into desired pasta shapes, such as fettuccine or tagliatelle.

Sauce Preparation

  1. 5

    Prepare the Sauce

In a large skillet, heat the olive oil over medium heat. Add the whole garlic cloves and sauté until fragrant, about 1-2 minutes.

  2. 6

    Cook the Tomatoes

Add the cherry tomatoes and salt, cooking until the tomatoes begin to burst, about 5-7 minutes. Use a wooden spoon to gently crush them.

  3. 7

    Finish the Sauce

Remove from heat and stir in the fresh basil, black pepper, and grated Parmesan cheese, mixing well until combined.

Cooking the Pasta

  1. 8

    Boil the Pasta

Bring a large pot of salted water to a boil. Add the freshly made pasta and cook for 2-4 minutes until al dente.

  2. 9

    Combine with Sauce

Drain the pasta and reserve some pasta water. Add the pasta directly to the skillet with the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
