Prepare the Glaze
In a small saucepan, combine the orange juice, soy sauce, honey, grated ginger, minced garlic, salt, and pepper. Bring to a simmer over medium heat and cook for about 5-7 minutes until the glaze thickens slightly. Remove from heat and set aside.

Roast the Salmon
Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper. Brush each fillet generously with the orange ginger glaze. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Sauté the Bok Choy and Mushrooms
While the salmon is roasting, heat sesame oil in a large skillet over medium heat. Add sliced mushrooms and sauté for about 3-4 minutes. Then add bok choy and continue to cook for another 3 minutes until wilted. Season with salt and pepper to taste.

Serve
To serve, place a portion of the sautéed bok choy and mushrooms on each plate. Top with a roasted salmon fillet and drizzle any remaining glaze over the top. Garnish with sliced green onions.
