Method

Ribeye Steak

    Prepare the Steak

    Season the ribeye steaks with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a skillet over high heat. Add the steaks and sear for about 4-5 minutes on each side for medium-rare. Adjust time according to desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

    Cook the Potatoes

    Peel and cut the Yukon Gold potatoes into uniform pieces. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and let them steam dry for a minute. Pass through a potato ricer or mash until smooth.

    Incorporate Butter and Cream

    Add the unsalted butter and heavy cream to the potatoes, mixing until creamy. Season with salt to taste.

Sautéed Spinach

    Sauté the Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add the Spinach

    Add the fresh spinach to the skillet and cook, stirring, until wilted. Season with salt and black pepper to taste.

Demi-Glace

    Prepare the Glaze

    In a saucepan, combine beef stock, red wine, and chopped shallots. Bring to a boil, then reduce to a simmer.

    Reduce the Sauce

    Simmer until reduced by half and thickened, about 20-30 minutes. Stir in butter, and season with salt and pepper.
