Method

Robuchon Potatoes

    Prepare the Potatoes

    Peel and cut the Yukon Gold potatoes into equal-sized chunks. Place them in a pot of salted water and bring to a boil.

    Cook the Potatoes

    Reduce heat and simmer for about 15-20 minutes or until tender. Drain and return to the pot.

    Mash and Mix

    Add heavy cream, butter, salt, and white pepper to the potatoes. Mash until smooth and creamy. Keep warm.

Sautéed Spinach

    Sauté the Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Spinach

    Add fresh spinach to the skillet and toss until wilted, about 3-4 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.

Demi-Glace

    Prepare the Demi-Glace

    In a saucepan, combine beef stock, red wine, and shallots. Bring to a boil, then reduce to a simmer and let reduce by half, about 15-20 minutes.

    Finish the Sauce

    Whisk in butter and season with salt and black pepper to taste. Keep warm.

New York Strip

    Prepare the Steaks

    Pat the New York strip steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Cook the Steaks

    In a skillet, heat olive oil over high heat. Add steaks and cook for 4-5 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes.

Plating

    Serve

    On a plate, place a serving of Robuchon potatoes, top with sautéed spinach, and place the rested New York strip steak. Drizzle with demi-glace.
