Mussels with Tomato and Fennel Sausage

    Prepare the Ingredients

    Clean the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped. Chop the onion, garlic, and fennel bulb. Finely chop the parsley.

    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the fennel sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion and fennel bulb. Sauté for about 5 minutes until soft. Add the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Wine

    Stir in the canned diced tomatoes and white wine. Bring to a simmer and allow to cook for 5 minutes.

    Add Mussels and Sausage

    Return the cooked sausage to the pot, then add the cleaned mussels. Cover the pot and cook for about 5-7 minutes, or until the mussels have opened up. Discard any mussels that remain closed.

    Season and Serve

    Season the dish with salt and black pepper to taste. Stir in chopped parsley before serving. Serve hot with slices of grilled bread on the side.
