Prepare the Broth
In a saucepan, bring the vegetable broth to a simmer over medium heat. Keep it warm on low heat throughout the cooking process.

Sauté the Onions and Mushrooms
In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until caramelized, about 5-7 minutes. Add the minced garlic and wild mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.

Toast the Arborio Rice
Add the Arborio rice to the skillet, stirring to combine. Cook for 1-2 minutes until the rice is lightly toasted.

Add the Broth Gradually
Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Finish the Risotto
Once the rice is cooked, remove the skillet from heat. Stir in the remaining butter, Parmesan cheese, salt, and black pepper to taste. Mix well until creamy.

Garnish with chopped fresh parsley and additional Parmesan cheese if desired. Serve immediately.
