    Prepare the Pork Chops

    Season the double bone pork chops with salt and black pepper on both sides.

    Sear the Pork Chops

    In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.

    Cook the Grits

    In a saucepan, bring chicken broth to a boil. Slowly whisk in the grits and reduce heat to low. Cook for about 20-25 minutes until thickened, stirring occasionally.

    Prepare the Collard Greens

    In the same skillet used for the pork, add garlic and collard greens. Sauté for about 5-7 minutes until the greens are wilted and tender.

    Make the Red Eye Gravy

    Using the drippings from the skillet, add a small amount of water or coffee to deglaze the pan. Scrape the bottom to release the flavors. Allow to simmer for a few minutes.

    Plate the pork chop with a side of grits and collard greens, and drizzle with red eye gravy.
