BBQ Braised Short Ribs

    Sear the Ribs

    Season the short ribs with salt and black pepper. In a large pot, heat olive oil over medium-high heat and sear the ribs on all sides until browned. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent.

    Braise the Ribs

    Return the short ribs to the pot. Add BBQ sauce and beef broth. Bring to a simmer, cover, and braise in the oven at 300°F (150°C) for 3 hours or until tender.

Polenta

    Cook the Polenta

    In a saucepan, bring water to a boil. Gradually whisk in polenta, reduce heat, and cook until thickened, about 15 minutes, stirring frequently.

    Finish the Polenta

    Stir in butter and grated Parmesan cheese until smooth and creamy.

Kohlrabi Slaw

    Prepare the Slaw

    In a bowl, combine julienned kohlrabi, grated carrot, apple cider vinegar, olive oil, honey, salt, and black pepper. Toss to combine and let sit for 15 minutes.

Pickles

    Make the Pickles

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, then pour over sliced cucumbers in a jar. Let cool and refrigerate for at least 1 hour before serving.
