Our Signature Sweet Potato Gnocchi Recipe

Method

Prepare the Gnocchi

    Cook the Sweet Potatoes

    Boil sweet potatoes in salted water until tender. Drain, let cool slightly, and peel.

    Make the Dough

    Mash the sweet potatoes, then combine with the egg and salt. Gradually mix in flour until a dough forms. Knead gently until smooth.

    Shape the Gnocchi

    Divide the dough into sections and roll into logs. Cut into small pieces and press with a fork to create ridges.

    Cook the Gnocchi

    Bring a pot of salted water to a boil. Cook gnocchi until they float to the surface, then remove with a slotted spoon.

Prepare the Sauce

    Cook the Bacon

    In a large skillet, cook the wild boar bacon until crispy. Remove and chop into pieces.

    Make the Sage Maple Butter

    In the same skillet, melt the butter and add the sage leaves. Cook until fragrant, then add maple syrup and stir to combine.

    Combine Ingredients

    Add the cooked gnocchi, spinach, chopped bacon, and gorgonzola to the skillet. Toss gently until spinach wilts and cheese melts.

    Plate the gnocchi and sprinkle with toasted walnuts. Drizzle with additional sage maple butter if desired.
