Method

Preparing the Dough

  1. 1

    Combine Ingredients

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat, stirring occasionally.

  2. 2

    Add Flour

Once the mixture is boiling, remove the saucepan from heat and quickly stir in the flour until a smooth dough forms.

  3. 3

    Incorporate Eggs

Allow the dough to cool for a few minutes, then add the eggs one at a time, stirring vigorously after each addition until fully incorporated.

  4. 4

    Heat Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Frying the Zeppole

  1. 5

    Form the Dough

Using a spoon or a piping bag fitted with a large round tip, drop small balls (about 1 tablespoon each) of dough into the hot oil.

  2. 6

    Fry Until Golden

Fry the zeppole for about 3-4 minutes, or until they are puffed and golden brown, turning them occasionally for even cooking.

  3. 7

    Drain Oil

Using a slotted spoon, remove the zeppole from the oil and place them on a plate lined with paper towels to drain excess oil.

Serving

  1. 8

    Top with Gelato

Place a few zeppole on a serving plate and top each one with a scoop of gelato.

  2. 9

    Add Whipped Cream

Dollop whipped cream on top of the gelato.

  3. 10

    Drizzle Sauces

Drizzle chocolate and strawberry sauces over the zeppole and serve immediately.
