Panna Cotta Preparation

Prepare Gelatin
In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5-10 minutes to bloom.

Heat Cream and Milk
In a saucepan, combine the heavy cream, whole milk, and granulated sugar. If using a vanilla bean, split it open and scrape the seeds into the mixture, then add the pod as well. Heat the mixture over medium heat until it is hot but not boiling, stirring occasionally.

Combine Gelatin
Once the cream mixture is hot, remove it from the heat. Remove the vanilla pod (if used). Stir in the bloomed gelatin until fully dissolved.

Chill the Panna Cotta
Pour the mixture into individual serving cups or ramekins. Let them cool to room temperature, then refrigerate for at least 4 hours, or until set.
Berry Coulis Preparation

Cook the Berries
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat until the berries release their juices and the sugar dissolves, about 5-7 minutes.

Blend the Coulis
Remove the saucepan from heat and let it cool slightly. Blend the mixture until smooth using an immersion blender or a regular blender. Strain the coulis through a fine-mesh sieve if you prefer a smoother texture.

Serve
Once the panna cotta has set, serve it topped with the berry coulis.
