Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Make the Dough

    In a large mixing bowl, combine flour and salt. Create a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let it Rise

    Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Mix the Filling

    In a mixing bowl, combine ricotta cheese, shredded mozzarella cheese, diced ham, black pepper, and Italian seasoning. Mix well until evenly combined.

Assembly

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Shape the Calzones

    Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 6-8 inches in diameter.

    Fill the Calzones

    Place a generous amount of the filling on one half of each dough circle, leaving a border around the edge. Fold the other half over to create a pocket and press the edges to seal.

    Egg Wash

    In a small bowl, whisk together the egg and water. Brush the egg wash over the top of each calzone.

Baking

    Bake the Calzones

    Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20 minutes or until golden brown.
