    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt. Remove any beards (the fibrous threads) by pulling them off with your fingers.

    Prepare the Ingredients

    Chop the fresh basil leaves and dice the tomatoes. Mince the garlic cloves.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add the Tomatoes and Basil

    Stir in the diced tomatoes and chopped basil. Cook for another 3-4 minutes until the tomatoes soften.

    Add the Wine and Mussels

    Pour in the dry white wine and bring the mixture to a simmer. Add the cleaned mussels and stir to combine. Cover the pot with a lid.

    Steam the Mussels

    Allow the mussels to steam for about 5-7 minutes, or until they have opened. Discard any mussels that do not open.

    Finish the Sauce

    Once the mussels are cooked, remove the pot from heat. Stir in the remaining 2 tablespoons of butter, salt, and black pepper, mixing until the butter is melted and the sauce is well combined.
