Cooking the Pasta

Boil Water
Fill a large pot with water, add a generous amount of salt, and bring it to a boil.

Cook Spaghetti
Once the water is boiling, add the spaghetti and cook according to package instructions until al dente (usually about 8-10 minutes).

Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta cooking water. This will help to create the sauce later.

Drain Spaghetti
Drain the spaghetti and return it to the pot off the heat.
Preparing the Sauce

Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until it becomes crisp and golden, about 5-7 minutes. Remove from heat.

Beat Eggs and Cheese
In a medium bowl, whisk the eggs together with the grated Parmesan cheese and black pepper until well combined.

Mix Pasta with Pancetta
Add the hot, drained spaghetti to the skillet with the pancetta. Toss to combine, allowing the heat from the pasta to slightly cool the pancetta.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the spaghetti, tossing vigorously to combine. The heat from the pasta will cook the eggs gently, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Season and Serve
Taste and adjust seasoning with salt and additional black pepper if needed. Serve immediately with extra Parmesan cheese on top if desired.
