Preparation

    Prepare the Scaloppini

    If using veal or chicken, slice the meat into thin, even pieces about 1/4 inch thick. Pound the slices gently with a meat mallet to tenderize.

    Chop Vegetables

    Peel and finely chop the onion. Clean the mushrooms with a damp cloth and slice them. Dice the tomatoes after removing the seeds.

    Season the Meat

    Sprinkle the scaloppini slices with salt and black pepper on both sides.

Cooking

    Sauté the Onions and Mushrooms

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the sliced mushrooms and cook until they are soft, about 5 minutes.

    Cook the Scaloppini

    Push the onions and mushrooms to the side of the skillet. In the same skillet, add the scaloppini in a single layer and cook for about 2 minutes on each side until golden brown.

    Deglaze the Pan

    Pour in the white wine and broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

    Add Tomatoes and Finish

    Stir in the diced tomatoes and remaining 2 tablespoons of butter. Let the sauce simmer for another 3-5 minutes until slightly thickened.

    Garnish and Serve

    Remove from heat, sprinkle with fresh parsley, and serve immediately with your choice of side.
