Prepare the Scaloppini
If using veal or chicken, slice the meat into thin, even pieces about 1/4 inch thick. Pound the slices gently with a meat mallet to tenderize.

Season the Meat
Sprinkle the scaloppini slices with salt and black pepper on both sides.

Sauté the Onions and Mushrooms
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the sliced mushrooms and cook until they are soft, about 5 minutes.

Deglaze the Pan
Pour in the white wine and broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.

Add Tomatoes and Finish
Stir in the diced tomatoes and remaining 2 tablespoons of butter. Let the sauce simmer for another 3-5 minutes until slightly thickened.

Garnish and Serve
Remove from heat, sprinkle with fresh parsley, and serve immediately with your choice of side.
