Method

Preparing Salmon

  1. 1

    Marinate the Salmon

In a small bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper. Place the salmon filets in a shallow dish and pour the marinade over them. Ensure the filets are evenly coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Grill the Salmon

Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork. Remove from grill and let it rest.

Preparing Zucchini

  1. 3

    Slice the Zucchini

Wash the zucchini and cut them into half-moon slices about 1/4 inch thick.

  2. 4

    Sauté the Zucchini

In a skillet, heat olive oil over medium heat. Add the zucchini slices, sprinkle with salt and black pepper, and sauté for about 5-7 minutes, or until they are tender and slightly browned. Remove from heat.

Preparing Tomato

  1. 5

    Roast the Tomatoes

Preheat the oven to 400°F (200°C). Cut the tomatoes in half and place them cut-side up on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast in the oven for about 20-25 minutes, or until they are soft and slightly caramelized.
