Pasta and Beans
Method
Preparation
- 1
Soak the Beans
In a large bowl, cover the dried cannellini beans with water and soak them overnight. If short on time, you can use the quick soak method by boiling the beans for 2 minutes, then letting them sit for 1 hour before draining.
- 2
Cook the Beans
After soaking, drain and rinse the beans. In a large pot, add the beans and cover them with fresh water. Bring to a boil, then reduce to a simmer. Cook for about 1 hour or until the beans are soft. Drain and set aside.

Add Broth and Seasoning
Pour in the chicken broth and add the cooked beans, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 15 minutes.
- 5
Cook the Pasta
Add the pasta to the pot and cook according to the package instructions, usually about 8-10 minutes until al dente. Stir occasionally to prevent sticking.

Finish the Dish
Once the pasta is cooked, stir in the chopped parsley and adjust seasoning to taste. Remove the bay leaf before serving.
