Method

Preparing the Oysters

  1. 1

    Gather Your Ingredients

Start by gathering all the ingredients you will need: fresh oysters, ice, lemon, raspberry mignonette sauce, and hot sauce.

  2. 2

    Prepare the Ice Bed

Fill a serving platter or a large bowl with ice to create a chilled bed for the oysters. This will help keep them fresh and cool.

  3. 3

    Shuck the Oysters

Using an oyster knife, carefully shuck each oyster. Hold the oyster in a towel to protect your hand, insert the knife into the hinge of the oyster, and twist to open it. Remove the top shell and leave the oyster on the bottom shell, discarding the top shell.

  4. 4

    Arrange on Ice

Place the shucked oysters on the prepared ice bed. Make sure they are stable and not tipping over.

Serving the Oysters

  1. 5

    Cut the Lemon

Cut the lemon into wedges. This will be used for squeezing over the oysters.

  2. 6

    Serve with Accompaniments

Serve the oysters with raspberry mignonette sauce and hot sauce on the side. Allow guests to dress the oysters to their taste with lemon juice, sauce, or hot sauce.
