Preparing the Cheesecake

Preheat the Oven
Preheat your oven to 160°C (320°F).

Prepare the Crust
In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted unsalted butter until well combined. Press this mixture firmly into the bottom of a 9-inch (23 cm) springform pan to form the crust.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and allow to cool slightly.

Mix the Cheesecake Filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue mixing until well incorporated. Add the sour cream, vanilla extract, and salt; mix until smooth.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Incorporate Flour
Sift the all-purpose flour over the mixture and fold it gently into the batter until just combined.

Pour the Batter
Pour the cheesecake batter over the cooled crust in the springform pan.

Bake the Cheesecake
Bake the cheesecake in the preheated oven for about 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for about 1 hour.

Chill
Remove the cheesecake from the oven, cover it with plastic wrap, and refrigerate for at least 4 hours or overnight.
Making the Strawberry Coulis

Prepare the Strawberries
Wash and hull the fresh strawberries. Cut them in half if they are large.

Cook the Strawberries
In a saucepan, combine the strawberries, granulated sugar, and lemon juice. Cook over medium heat for about 10 minutes, stirring occasionally until the strawberries break down and a syrup forms.

Blend the Coulis
Remove from heat and let cool slightly. Blend the mixture until smooth using an immersion blender or a regular blender. Strain through a fine mesh sieve if you prefer a smoother coulis.

Chill the Coulis
Allow the coulis to cool completely before serving.
Serving

Serve the Cheesecake
Once the cheesecake is chilled, carefully remove it from the springform pan. Slice and serve with the strawberry coulis drizzled over the top.
