Pasta Dough

    Make the Pasta Dough

    In a large mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Make a well in the center and add 2 large eggs. Mix together using a fork until a dough starts to form, then knead on a floured surface for about 5-7 minutes until smooth. Wrap the dough in plastic wrap and let it rest for 30 minutes.

Lobster Filling

    Prepare the Lobster Filling

    In a bowl, mix together 1 cup of chopped cooked lobster meat, 1 cup of ricotta cheese, 1 tbsp of grated Parmesan cheese, 2 tbsp of chopped chives, 1 tbsp of lemon juice, 1 tsp of salt, and 1 tsp of black pepper. Stir until well combined, then refrigerate until ready to use.

Shrimp and Asparagus

    Cook Shrimp and Asparagus

    In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Add 2 minced garlic cloves and sauté for about 1 minute. Add 1 lb of large shrimp and 1 cup of asparagus, then sprinkle with 1 tbsp of Cajun seasoning. Cook for 4-5 minutes until the shrimp are cooked through and the asparagus is tender. Remove from heat and set aside.

Pink Sauce

    Make the Pink Sauce

    In a saucepan over medium heat, combine 1 cup of heavy cream and 1/2 cup of tomato sauce. Stir well and bring to a simmer. Add 1 tbsp of grated Parmesan cheese, and season with salt and black pepper to taste. Let it simmer for about 5 minutes until slightly thickened.

Assembly

    Assemble the Ravioli

    Roll out the pasta dough into thin sheets. Place small spoonfuls of the lobster filling onto one sheet, spacing them about 2 inches apart. Place another sheet of pasta on top and press down around the filling to seal. Cut out individual ravioli using a cutter or knife. Repeat until all dough and filling is used.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon and transfer to plates.

    Serve

    Top the cooked ravioli with the shrimp and asparagus mixture and drizzle with the pink sauce. Garnish with additional Parmesan cheese if desired and serve immediately.
