Method

Preparation

  1. 1

    Prepare the Chicken

Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

  2. 2

    Dredge the Chicken

Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each chicken breast first in flour, then in the egg, and finally in the breadcrumbs, ensuring an even coating.

Cooking

  1. 3

    Fry the Chicken

In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown. Transfer the chicken to a paper towel-lined plate to drain excess oil.

  2. 4

    Assemble the Dish

In a baking dish, spread half of the marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce, then cover each breast with the remaining marinara sauce. Sprinkle shredded mozzarella and grated Parmesan cheese on top.

  3. 5

    Bake

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Serving

  1. 6

    Garnish and Serve

Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves and red pepper flakes, if desired. Serve hot with pasta or a side salad.
