Making the Tortellini

Prepare the Dough
In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Mix together until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a separate bowl, mix the ricotta cheese, grated Parmesan cheese, nutmeg, and black pepper until well combined.

Roll Out the Dough
After resting, divide the dough into quarters. Roll out each quarter into thin sheets using a pasta machine or rolling pin. Aim for a thickness of about 1/16 inch.

Shape the Tortellini
Cut the rolled dough into 2-inch squares. Place a small amount (about 1 teaspoon) of the cheese filling in the center of each square. Fold the square into a triangle and press the edges to seal. Then, bring the two corners of the triangle together and pinch to form the tortellini shape.

Boil the Tortellini
Bring a large pot of salted water to a boil. Gently add the tortellini and cook for about 4-5 minutes, or until they float to the surface and are tender.

Prepare the Sauce
While the tortellini is cooking, heat your choice of pomodoro, alfredo, or pesto sauce in a separate saucepan over medium heat until warmed through.

Serve
Drain the cooked tortellini and add them to the saucepan with your chosen sauce. Toss gently to coat, then serve immediately.
