    Prepare the Dough

    In a mixing bowl, whisk together the flour, sugar, cocoa powder, cinnamon, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg white and wine (or vinegar), mixing until a dough forms. Knead the dough for about 5 minutes until smooth.

    Rest the Dough

    Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 1 hour.

    Roll and Cut the Dough

    On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles about 4 inches in diameter.

    Form the Shells

    Wrap each circle of dough around a cannoli tube, sealing the edges with a bit of water. Make sure they are tightly sealed.

    Fry the Shells

    Heat the oil in a deep frying pan over medium heat. Fry the shells for about 2-3 minutes or until golden brown. Remove from the oil and drain on paper towels. Let cool completely before removing the tubes.

    In a mixing bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture.

    Add Chocolate Chips

    Fold in the chocolate chips until evenly distributed throughout the filling.

    Using a piping bag, fill each cooled cannoli shell with the mascarpone filling. Be generous!
