Preparation of Croutons

    Prepare the Croutons

    Preheat the oven to 375°F (190°C). Cut the rustic bread into bite-sized cubes. In a mixing bowl, combine the bread cubes, olive oil, minced garlic, and salt. Toss until the bread is evenly coated.

    Bake the Croutons

    Spread the bread cubes on a baking sheet in a single layer. Bake for about 10-15 minutes, or until they are golden brown and crispy, tossing halfway through for even baking. Remove from the oven and set aside to cool.

Preparation of Dressing

    Make the Dressing

    In a small bowl, mash the anchovy fillets with a fork until smooth. Add the minced garlic, Dijon mustard, and lemon juice. Whisk until combined. Gradually drizzle in the olive oil while continuing to whisk until the dressing is emulsified. Season with black pepper to taste.

Assemble the Salad

    In a large salad bowl, add the chopped romaine lettuce. Pour the prepared dressing over the lettuce and toss well to coat evenly.

    Add the roasted garlic croutons to the salad and toss gently to combine. Top with shaved Parmesan cheese.
