    Marinate the steak

    Pat the steak dry with paper towels. In a small bowl, combine olive oil, lime juice, minced garlic, ground cumin, salt and black pepper. Rub the mixture over both sides of the steak. Let rest at room temperature for 10–15 minutes (or refrigerate up to 2 hours).

    Grill or skillet-cook the steak

    Preheat a grill or heavy skillet to medium-high heat. When hot, place the steak on the grill/skillet and cook about 3–4 minutes per side for medium-rare (times vary by thickness). For very small portions for kids, aim for 3 minutes per side. Remove steak and let rest 5 minutes, then thinly slice against the grain into small, bite-sized pieces suitable for kids.

Tater Tots

    Cook the frozen tater tots according to package instructions. For oven: preheat to 425°F (220°C), arrange tots in a single layer on a baking sheet, lightly spray or brush with 1 tsp oil if desired, bake 18–22 minutes until golden and crispy, turning once. For air fryer: cook at 400°F (205°C) for 10–12 minutes, shaking halfway. Sprinkle a little salt to taste when hot. Keep warm until assembling tacos.

Queso Blanco & Cheese

    Make quick queso blanco

    In a small saucepan over low heat, combine the shredded white cheese, milk, softened cream cheese and butter. Stir continuously until the cheese melts and the mixture is smooth and slightly thickened (about 3–5 minutes). If too thick, add a splash more milk. Taste and add a pinch of salt if needed. Keep warm on the lowest heat, stirring occasionally.

    If preferred, reserve half the shredded blend to sprinkle directly on tacos instead of melting into the queso.

Tortillas & Assembly

    Warm the small flour tortillas in a dry skillet over medium for 20–30 seconds per side or wrap in foil and warm in a 350°F (175°C) oven for 5–7 minutes. Keep tortillas covered with a clean towel to stay soft.

    Assemble each kid-sized taco: place 2 warm tortillas (or fold one) and spoon 1–2 tablespoons of sliced steak onto each. Top with 2 tater tots per taco (break in half if desired for easier eating). Drizzle 1–2 tablespoons of queso blanco over the top, then sprinkle a tablespoon of the shredded cheese blend. Add a tiny pinch of chopped cilantro or a squeeze of lime if using.

    Serve immediately while warm. Leftover queso can be reheated gently with a splash of milk. Store extra steak in fridge up to 3 days and tater tots separately to retain texture.
