Season
Pat the steak dry with paper towels. Sprinkle 1 tsp salt and 1 tsp freshly ground black pepper evenly over both sides of the steak. Rub 1 tablespoon olive oil over the steak to help seasoning adhere.

Cook steak
Heat a skillet or grill pan over medium-high heat until hot (about 2–3 minutes). If using a skillet, add 1 tsp vegetable oil and swirl. Add the steak and cook 3–4 minutes per side for medium-rare to medium (thickness dependent). For thinner cuts, 2–3 minutes per side may be sufficient. Internal temp target ~130–140°F (54–60°C).

Rest & Slice
Transfer the cooked steak to a cutting board and let rest for 5 minutes to retain juices. Slice the steak thinly against the grain into small, kid-friendly bite-sized strips (about 1/4-inch wide).

Assemble quesadilla
Heat a clean nonstick skillet over medium-low heat. Place one 8-inch tortilla in the skillet. Sprinkle half of the cheddar (1/2 cup) and half of the Monterey Jack (1/4 cup) evenly over the tortilla. Distribute the sliced steak evenly over the cheese, then top with remaining cheddar and Monterey Jack. Place the second tortilla on top and press gently with a spatula.

Grill quesadilla
Add 1/2 tablespoon butter to the skillet and let it melt, moving it under the tortilla. Cook 2–3 minutes until the bottom tortilla is golden brown and cheese begins to melt. Carefully flip the quesadilla using a spatula (add remaining 1/2 tablespoon butter around the edge if needed) and cook another 2 minutes until golden and cheese is fully melted. Reduce heat if browning too quickly.

Slice & serve
Transfer the quesadilla to a cutting board and let rest 1 minute. Cut into 4 wedges (for kids) or 6 slices for smaller portions. Ensure slices are cool enough before serving to children.
Citrus Lime Crema (kid-friendly)

While the steak rests, combine 1/2 cup plain Greek yogurt, 1 tablespoon fresh lime juice, 1/2 teaspoon lime zest, 1 teaspoon honey and 1/8 teaspoon salt in a small bowl. Whisk until smooth. If the crema is too thick for dipping, add up to 1 teaspoon water and whisk to desired consistency. Taste and adjust honey or salt to be mildly sweet and tangy for kids.

Transfer crema to a small dipping bowl and refrigerate briefly if not serving immediately. Serve alongside quesadilla wedges for dipping.

Optional: Serve with a small lime wedge for parents to squeeze if desired. Check temperature before giving to children and cut pieces into bite-size portions appropriate for the child's age.
