Make the lime crema
In a small bowl, whisk together sour cream and Greek yogurt until smooth. Add fresh lime juice, lime zest, honey, 1/8 tsp salt and a pinch of black pepper. Taste and adjust: add another 1/2 teaspoon honey if you want sweeter, or a little more lime juice if tangier. Chill in refrigerator while you make quesadillas (at least 10 minutes) so flavors meld.

Prepare filling
Combine shredded cheddar and Monterey Jack in a bowl and stir to evenly distribute cheeses. Sprinkle 1/4 tsp salt into the cheese and toss gently.

Cook quesadillas
Butter one side of a tortilla with about 1/2 tablespoon of unsalted butter. Place the tortilla butter-side-down in the skillet. Sprinkle about 1/2 cup of the shredded cheese evenly over the tortilla, leaving a 1/2 inch border. Top with another tortilla (buttered side up). Cook 2–3 minutes until the bottom tortilla is golden brown and cheese begins to melt. Carefully flip the quesadilla using a spatula. Cook another 2 minutes until the second side is golden and cheese is fully melted. Repeat with remaining tortillas and butter (you will use the remaining 1 1/2 tablespoons of butter across the remaining quesadillas).

Rest and cut
Transfer cooked quesadillas to a cutting board and let rest 1 minute (this helps the cheese set slightly). Cut each quesadilla into 3 or 4 wedges using a sharp knife or pizza cutter. Keep warm in a low oven (about 200°F / 95°C) on a baking sheet if making several.

Serve
Serve warm wedges with lime crema for dipping. Offer lime wedges and mild salsa on the side if desired.
