Prepare the Filet
Season the aged Black Angus filet with salt and pepper. Heat a skillet over medium-high heat and sear the filet for 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let it rest for a few minutes before slicing.

Make Cherry Balsamic Reduction
In a saucepan, combine cherry juice and balsamic vinegar. Simmer over medium heat until reduced by half and thickened. Set aside.

Assemble the Dish
On a plate, place a generous scoop of garlic mashed potatoes. Top with the sliced filet and spoon the beef bordelaise sauce over it. Add a dollop of creamy horseradish and a slice of Boursin cheese. Drizzle with cherry balsamic reduction and sprinkle crispy shallots on top.
