Prepare the Bacon
In a skillet over medium heat, cook the maple pepper bacon until crispy. Drain on paper towels and set aside.

Form the Patties
In a bowl, mix the short rib and brisket ground beef together. Form into two patties, ensuring they are slightly larger than the buns.

Cook the Burgers
Heat the skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness, adding the aged cheddar on top during the last minute of cooking to melt.

Assemble the Burger
Toast the burger buns lightly. Spread chipotle aioli on the bottom bun, then add the cooked patty with melted cheddar, followed by the grilled tomato and crispy bacon. Top with the other half of the bun.

Serve with Fries
Serve the burger alongside house-cut fries.
