    Prepare the Short Ribs

    Preheat oven to 300°F (150°C). Season the short ribs with salt, black pepper, and cayenne pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side.

    Cook the Short Ribs

    Add honey to the pot, then cover and transfer to the preheated oven. Cook for 3 hours until tender.

    Prepare the Sweet Potatoes

    While the ribs are cooking, peel and chop the sweet potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and mash with honey, adjusting sweetness to taste.

    Candied Bacon

    Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels. In the same skillet, add honey and return the bacon to coat it in the honey. Cook for an additional 2-3 minutes until caramelized.

    Fried Parsnips

    Thinly slice the parsnips. Heat oil in a frying pan over medium heat. Fry the parsnip slices until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

    Assemble the Dish

    On a plate, serve a generous scoop of the mashed sweet potatoes, place the short ribs on top, garnish with candied bacon, sprinkle with pecorino cheese, and add fried parsnips on the side.
