For the Salmon

    Cook the Salmon

    Heat olive oil in a pan over medium-high heat. Season salmon fillets with salt and black pepper. Place fillets skin-side down in the pan and cook for 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until cooked through. Remove from heat and set aside.

For the Confit Tomato & Leek Risotto

    Prepare the Risotto

    In a large saucepan, heat butter over medium heat. Add sliced leeks and minced garlic, sauté until softened. Stir in arborio rice to coat with butter, then add white wine and cook until absorbed. Gradually add vegetable broth, one ladle at a time, stirring constantly until the rice is creamy and cooked al dente. Stir in cherry tomatoes, parmesan cheese, and fresh basil before serving.

For the Lemon Aioli

    Make the Lemon Aioli

    In a bowl, combine mayonnaise, lemon juice, minced garlic, and salt. Mix well until smooth and set aside.

For the Crispy Leek

    Fry the Leek

    Heat oil in a deep frying pan. Toss sliced leeks in flour to coat. Fry in batches until golden and crispy. Drain on paper towels and season with salt.
