    Roasting the Chicken

    Preheat your oven to 375°F (190°C). Pat the chicken dry and rub it with olive oil, salt, black pepper, and fresh rosemary. Place the chicken in a roasting pan. Roast in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). Baste occasionally with the pan juices.

    Preparing the Heirloom Carrots

    While the chicken is roasting, peel and cut the heirloom carrots into uniform pieces. Toss them in olive oil, salt, and pepper. Add them to the roasting pan for the last 30 minutes of cooking time.

    Making the Truffle Mushroom Jus

    In a skillet over medium heat, add the truffle oil and sliced mushrooms. Sauté until golden brown. Add the chicken stock and simmer for about 10 minutes. Season with salt and pepper to taste.

    Making Goat Cheese Whipped Potatoes

    Boil the potatoes in salted water until tender. Drain and return to the pot. Add butter, milk, and goat cheese. Mash until smooth and creamy. Season with salt to taste.

    Once the chicken is done, let it rest for 10 minutes before carving. Serve with the heirloom carrots, goat cheese whipped potatoes, and drizzle with truffle mushroom jus.
