    Prepare the Pork Belly

    Preheat the oven to 150°C (300°F). Score the skin of the pork belly in a crosshatch pattern, making sure not to cut into the meat. Rub the pork belly with salt and black pepper. Drizzle with olive oil and place in a roasting pan.

    Roast the Pork Belly

    Roast the pork belly in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy. Allow it to rest for 15 minutes before slicing.

    Prepare Deviled Egg Mousse

    In a bowl, mix egg yolks, mayonnaise, mustard, and a dash of salt until smooth. Fold in whipped cream for a light texture. Adjust seasoning to taste.

    Prepare Pickled Apples

    Slice apples thinly and soak in a mixture of vinegar, sugar, and salt for at least 30 minutes.

    Assemble and Serve

    Slice the pork belly and arrange on a plate. Top with deviled egg mousse and pickled apples. Drizzle with local honey before serving.
