    Making the House Cut Fries

    1. Begin by washing and peeling the russet potatoes. Cut them into thick fries, about 1/2 inch wide.

    2. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    3. Drain and pat the fries dry with paper towels.

    4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

    5. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.

    Making the Malt Vinegar Aioli

    1. In a mixing bowl, combine the mayonnaise, malt vinegar, minced garlic, and Dijon mustard.
