Soup Preparation

    Caramelize the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized (about 30-40 minutes). Add minced garlic during the last 5 minutes of cooking.

    Add Liquids

    Pour in the white wine, scraping the bottom of the pot to deglaze. Allow it to simmer for 5 minutes, then add the beef broth, thyme, bay leaves, salt, and black pepper.

    Simmer the Soup

    Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes. Remove bay leaves before serving.

    Prepare the Croutons

    While the soup is simmering, prepare garlic croutons. Cut bread into cubes, toss with olive oil, minced garlic, salt, and bake at 375°F (190°C) until golden brown.

    Serve the Soup

    Ladle the soup into bowls, top with croutons, and sprinkle generously with gruyere and provolone cheese. Place under the broiler until the cheese is melted and bubbly.
