Filet Mignon with Truffle Parmesan Potatoes and Red Wine Demi

Preparation Steps

    Prepare the Filet Mignon

    Season the filet mignon with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat and sear the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from pan and let rest.

    Make the Truffle Parmesan Potatoes

    Boil the potatoes until tender. Drain and mash them with truffle oil, parmesan cheese, and butter until smooth. Season with salt and pepper to taste.

    Cook the Vegetables

    In the same skillet, add a bit more olive oil if needed and sauté the mixed vegetables until tender, about 5-7 minutes. Season with salt and pepper.

    Prepare the Red Wine Demi

    In the skillet, add minced garlic and cook for 1 minute. Pour in red wine and beef stock, and add fresh thyme. Bring to a boil and reduce to a simmer until the sauce thickens, about 10-15 minutes.

    Serve

    Plate the filet mignon with a generous scoop of truffle parmesan potatoes and the sautéed vegetables. Drizzle the red wine demi over the steak and serve immediately.
