Prepare the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into bite-sized florets and set aside.

Make the Batter
In a bowl, whisk together the chickpea flour, water, salt, and black pepper until smooth. The batter should be thick enough to coat the cauliflower.

Coat the Cauliflower
Dip each cauliflower floret into the batter, allowing excess batter to drip off.

Bake the Cauliflower
Place the coated cauliflower on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for 25-30 minutes, or until golden brown and crispy.

Toss with Buffalo Sauce
Once the cauliflower is baked, remove from the oven and toss with buffalo sauce until evenly coated.

Serve the buffalo cauliflower topped with the celery and carrot slaw, and sprinkle with crumbled blue cheese.
