    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for an additional 1 minute.

    Add Remaining Vegetables

    Stir in the diced carrots, celery, and potatoes. Cook for another 5 minutes, stirring occasionally.

    Add Broth and Seasonings

    Pour in the vegetable broth and add thyme, salt, and black pepper. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer for 25-30 minutes, or until the vegetables are tender.

    Finish with Parsley

    Remove the pot from heat and stir in the chopped fresh parsley. Adjust seasoning if needed.

    Mix Dry Ingredients

    In a large bowl, combine the flour, yeast, sugar, and salt.

    Make a well in the center of the dry ingredients and add the warm water and olive oil. Mix until a dough forms.

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape and Bake the Bread

    Punch down the risen dough and shape it into a loaf. Place in a greased loaf pan and let rise for another 30 minutes. Preheat the oven to 375°F (190°C) and bake for 30-35 minutes, or until golden brown.
