Method
Onion Rings
Prepare the Onions
Peel the onions and slice them into ½-inch thick rings. Separate the rings and set aside.
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Mix well. Gradually whisk in the cold sparkling water until the batter is smooth and thick enough to coat the onion rings.
Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it's ready.
Fry the Onion Rings
Dip each onion ring into the batter, ensuring it is fully coated. Carefully place the battered rings into the hot oil in batches, being careful not to overcrowd the pot. Fry for 2-3 minutes or until golden brown, flipping once halfway through. Remove the onion rings and drain on paper towels.
Honey Mustard Dipping Sauce
Mix the Sauce
In a small bowl, combine the honey, yellow mustard, mayonnaise, apple cider vinegar, and salt. Whisk until smooth and well blended. Adjust salt to taste.
