Preparing the Potatoes
1. Wash and Cut
Wash the russet potatoes thoroughly under cold water to remove any dirt. Cut them into thin strips (about 1/4 inch thick) to create fries.
2. Soak in Water
Place the cut fries into a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will result in crispier fries.
3. Drain and Dry
After soaking, drain the fries and spread them on a clean kitchen towel. Pat them dry to remove as much moisture as possible.

4. Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure proper temperature.
5. Fry in Batches
Carefully add a handful of the dried fries into the hot oil. Fry them for about 4-5 minutes or until golden brown and crispy. Do not overcrowd the pot.
6. Drain Excess Oil
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Season with salt and pepper immediately.

On a large serving platter, layer the freshly fried fries. Sprinkle shredded cheddar cheese evenly over the top, followed by the cooked bacon bits and sliced green onions.
